The perfect blueberry muffin storm happened today. Well, it started brewing a week or so ago when Scott got a free box of cake mix at the store. Then Monday, I decided to make blueberry muffins, so I bought fresh blueberries. Finally today, I got my Hungry Girl newsletter, which Sara got me hooked on, and low and behold cake mix and diet soda recipe!
The light bulb moment: Cake mix + diet soda + blueberries = Easiest Blueberry Muffins EVER!
Directions:
Instead of adding the oil, egg, and water to a box of cake mix, add a whole can of diet soda. (You can actually use any type of soda.) Mix for 2 minutes. Fold in blueberries before pouring into cupcake pan. (I added a butter/flour/sugar crumb topping to these.) Cook according to directions on box.
These puppies actually turned out great. They were really moist and had an almost caramel like taste.
Evidently you can do this with brownie mix also...in fact after some research, Scott the cynic found out you don't have to add the oil or the eggs to cake mix at all. A long time ago, they just added that to the directions so "bakers" thought they were contributing more to their "home cooking". Good to know!

Yum! I love the cake mix + diet coke trick. Diet Dr Pepper is really good with devil's food. And I've made white cake with Sunkist too.

I'd heard of using pumpkin pie filling and cake mix to make muffins, and using applesauce instead of oil... but never soda! What Scott found out is interesting. haha
So glad you tried it! I'm planning on doing the same over the weekend. Way to add blueberries for all those antioxidants!
I've also stocked up on pumpkin to try in an array of recipes. Just need to get around to actually baking!
Got around to taking a stab at this today. Used reduced sugar chocolate cake mix and cherry Coke zero. Cake was so moist - I could hardly believe it. I melted carmel and poured over top instead of icing. The combo tastes great together, but after the carmel hardens, make it hard to cut the cake cleanly!
It's unbelievable how moist these turn out. I'm glad it worked for you, sounds like a great concoction you made there!
